I have a few carrot shoulders poking out of the ground, but don’t know when I should start digging them up. My manual says to dig them up when they start poking out of the ground.. but then says to cut the green tips off and cover them w/ mulch for a winter harvest. I live in chicago. Any tips?????
Pull one up and see if it is big enough to eat. They get tougher as they get bigger to me. I like them small.

Well, my brother is growing carrots and we pulled them out way too early. The green tips were super long, and we thought they were ready to be pulled. They were not near done. I’d say that you should pull out the longest one, check on it, and give yourself an estimate of how much longer they should take. However, it also depends on what kinds of carrots you are growing and when you planted them.
